Position Summary

We are seeking an enthusiastic, self-driven, and highly knowledgeable Wine Manager to lead the wine program at CUT Las Vegas. The ideal candidate is a certified or advanced sommelier (or possesses equivalent expertise), with deep acumen in global wines and the ability to inspire both team members and guests with their passion for wine. This role is responsible for overseeing every aspect of the wine program — from cellar organization and staff education to guest engagement and administrative operations.

Key Responsibilities

  • Manage all aspects of the wine program, including selection, purchasing, inventory control, cost management, and vendor relations.
  • Act as the on-floor sommelier, offering expert wine service and personalized pairing recommendations to enhance the guest experience.
  • Train and mentor front-of-house staff on wine knowledge, service techniques, and food and wine pairings to elevate service standards.
  • Maintain and update the wine list, ensuring it reflects both excellence and variety while aligning with brand standards and seasonal menus.
  • Organize and oversee the wine cellar, ensuring proper storage, labeling, and temperature control.
  • Drive wine sales through guest interaction, team engagement, and special events such as wine dinners and tastings.
  • Handle all administrative aspects of the wine program, including invoicing, tracking usage, vendor negotiations, and compliance with all local and state beverage regulations.
  • Serve as a wine ambassador, fostering a culture of curiosity and enthusiasm for wine among both guests and team members.

Qualifications

  • Minimum 2 years of experience managing a wine program in an upscale, fine dining or luxury hospitality setting.
  • Experience overseeing all aspects of a wine program — including purchasing, inventory, cellar organization, vendor management, and compliance — is strongly preferred.
  • Certified Sommelier strongly preferred.
  • Proven ability to handle all administrative and operational aspects of a wine program.
  • Extensive knowledge of global wine regions, varietals, vintages, and food pairing principles.
  • Natural ability to connect with guests and staff — enthusiastic, articulate, and passionate about wine.
  • Excellent organizational, leadership, and communication skills.
  • Must be able to stand, walk, and move for extended periods; able to lift and carry wine cases.
