Senior Sous Chef (Head Chef Development Role)

About Us

The Dog & Fox is a high-volume, premium pub and dining venue at the heart of Wimbledon Village. Our food offer centres on elevated British classics, seasonally driven menus, and a strong focus on fresh produce, consistency, and execution. We operate a fast-paced kitchen with significant service volumes, particularly during peak trading periods and event seasons.

We are now seeking a commercially minded Senior Sous Chef with clear ambitions to progress to Head Chef level.


The Opportunity

This is a development-focused leadership role. You will work directly alongside the Head Chef, gaining exposure to the full operational, financial, and people-management aspects of running a successful kitchen.

You will be expected to act as second-in-command, taking full responsibility for the kitchen in the Head Chef’s absence and contributing strategically to the performance of the food operation.


Key Responsibilities

  • Overseeing daily kitchen operations and leading high-volume services

  • Deputising fully for the Head Chef when required

  • Driving food quality, consistency, and presentation standards

  • Managing GP targets, stock control, ordering, and supplier relationships

  • Labour scheduling and productivity management

  • Ensuring rigorous adherence to food safety, HACCP, and compliance standards

  • Training, mentoring, and succession planning within the brigade

  • Contributing to menu engineering and seasonal development

  • Supporting recruitment and performance management processes


What We’re Looking For

  • Proven experience as a Senior Sous Chef in a premium, high-volume environment

  • Strong financial acumen with understanding of GP, labour cost control, and waste management

  • Confident leadership style with the ability to inspire and hold teams accountable

  • Operational resilience and composure under pressure

  • Clear ambition to progress to a Head Chef role

  • High standards and a hands-on leadership approach


Development & Progression
