CULINARY LEAD-IN -TRAINING

Role: Culinary Lead in Training
We're looking for a passionate, hands-on kitchen professional ready to grow into our Culinary Lead role leadership role. This is an opportunity to be trained and mentored directly by our founder who is a Classically trained chef with over two decades of experience in Nigerian cuisine. You will also learn how to lead our kitchen operations in a high-volume, fast-casual and catering environment.

What You’ll Learn & Do:

  • Be trained to oversee culinary operations and uphold food quality and consistency
  • Learn to train and onboard kitchen crew using DÙNDÚ standards and recipes
  • Help ensure all BOH team members are prepared to execute tasks correctly
  • Receive mentorship in coaching, training, and team development
  • Learn to manage kitchen flow during peak hours without sacrificing quality
  • Maintain DOH food safety standards and lead daily cleanliness practices
  • Support inventory, prep, labeling, storage, and kitchen organization
  • Be trained to execute food production for large catering orders (400+ guests), managing bulk prep while maintaining quality, timing, and presentation
  • Coordinate with FOH leadership to ensure smooth daily shifts and readiness for the next service

Physical Requirements:

  • Stand and walk for entire shifts
  • Lift up to 40 lbs.
  • Work safely and stay alert in a busy kitchen
  • Bend, reach overhead, and handle kitchen equipment with dexterity

Requirements:

  • 2+ years cooking in high-volume kitchens (restaurant or catering)
  • 1+ year in a lead cook or hourly kitchen supervisory role
  • Experience with scaling recipes and culinary math
  • NYC DOH Food Handler’s Certificate required
