Server/Waiter/Waitress

Job responsibilities include:

o Servers must ensure that family meal is cleared and stored, tables and counter are set and
detailed perfectly. All water glasses must be checked and hand polished and arrangement of
table settings must be detailed before the EP pre-shift meeting at 5:30pm.
o Greeting guests in a timely fashion ascertaining water preference. In California, due to our
drought, restaurant servers must offer bottled water (still or sparkling). Filtered ice water is
available upon request.
o Informing all guests of daily specials and guiding the guest through the best way to order.
Showcasing items in all categories that are best for overall dining experience. This
requires full knowledge of current a la carte dinner menu, chef’s menu, dessert menu and
focused attention on common allergens (i.e. shellfish, fish, poultry, pork, dairy, eggs, peanuts,
treenuts, soy, gluten)
o Communicating with the Chef about allergies, special requests and pacing of our restaurant
guests.
o Highlighting the bar craft cocktail program, specialty cocktail menu, wines BTG, aperitifs and
digestifs. Refer to the beverage director or sommelier for recommendations.
o Ensure that guest orders are entered in correctly, with restrictions, coursing and positions
accurately entered.
o Ensuring that food arrives in a timely fashion, while doing guest checks and upselling of cocktails
and beverages. There shouldn’t be any empty glassware on the table, unless specified upon
guest request.
o Ensuring that desserts, after dinner drinks and or coffee/tea service has been offered to
complete the dining experience.
o Ensure that payment has been ascertained and paid in full before guest departure.
Secondary functions:
o Setting and detailing tables before and throughout service. Polishing silver, glassware, making
rollups.
o Aiding and communicating job tasks to the EP backwaiters.
