ROOFTOP GENERAL MANAGER
As the General Manager of Broken Shaker Rooftop Los Angeles, your core
responsibilities encompass overseeing daily operations, managing staff and
managers, and ensuring exceptional guest experiences across all dining
outlets. You’ll collaborate on menu
development, promotions and programming, monitor financial performance, and
implement cost-saving measures while maintaining high standards of service and
cleanliness. Staff training, compliance
with regulations and fostering effective communication between departments are
essential, alongside a commitment to continuous improvement and staying abreast
of industry trends to drive innovation and revenue growth.

ABOUT FREEHAND LOS ANGELES
Housed in the historic Commercial Exchange
building, our hotel in downtown Los Angeles is truly one-of-a-kind, featuring
suites, premium hotel rooms and shared accommodations with interiors designed
by Roman & Williams. The property is a new and exciting presence in the
downtown LA scene, offering the classic Freehand accommodation experience for
guests, while also fully integrating into the local community with a calendar
full of events and activations at the Broken Shaker rooftop bar and pool,
Rudolph’s Bar & Tea bar, The Exchange Restaurant, and Cafe Integral. Situated
in walking distance to local restaurants, bars, markets and hotspots, Freehand
Los Angeles has a real buzz that makes it a pleasure to stay (and work) at.
NUTS AND BOLTS OF THE JOB
- Reports to Hotel GM
- Oversees F&B Management team of 3 F&B Managers managing all food and
beverage on property: Café Integral, Exchange Restaurant, Rudolph’s Lobby Bar
- Responsible for weekly manager (MOD) schedule
- Orders liquor and beverage for property maintaining weekly budgeted liquor
cost
- Engages and manages programming and activations with help of operating
partners, brand partners and events teams.
- Ensures quality of product and specification of all menu items and offerings
- Communicates closely with marketing team for creative requests, social posts
etc
- Leads weekly manager meeting
- Attends weekly BEO meeting, ensures proper ordering, planning and staffing
for all upcoming events
- Responsible for accuracy of POS pricing and items
- To direct the functions of administration and planning of the food &
beverage department and responsible for the overall running of the department
to meet the daily needs of the operation
- To confer with management on reports, forecasts, budgets, policies and future
planning. Recommends to management, changes or innovation in policy and future
planning, procedures and equipment
- Strive at all times for 100% customer satisfaction
- Have a knack for activating spaces, making sure every square metre of space
is monetised
- Fully integrate events programming to create genuine lifestyle experiences
- Partner with operating partners + the right suppliers to curate the food,
coffee and craft beer experience
- Exceed the budgeted departmental P&L and be commercially savvy in
exploring new revenue streams
- Control payroll and all cost of sales with a strict and robust stock
management system
- Know all statutory legislation and ensure H&S, Fire Safety and Food Hygiene
compliance
- Builds an efficient team to ensure continued employee motivation is
maintained through consultation, target setting and regular reviews
- Develop and train all employees within your charge in order that they perform
to the required standard
- Train staff on upselling techniques to maximise daily revenues
- Builds a culture of hospitality, enthusiasm and accountability
