Prep Chef (Junior Sous)

As Prep Chef at Hawksmoor, you’ll be the foundation of our kitchen working at a Junior Sous level of cooking and kitchen management.  Working daytime hours, you’ll lead preparation, organisation and back of house standards so the brigade is fully set up for service. From sauces and slow cooks to goods in and food safety, your work will set the tone for the day.

This is a role for someone who takes pride in doing things properly. Someone organised, consistent and calm. Someone who understands that great service starts long before the first guest arrives.

What You’ll Do
  • Lead and deliver structured morning prep across sauces, stocks, slow cooks and key menu elements
  • Prepare meats, fish and vegetables to Hawksmoor standards
  • Oversee goods in, checking deliveries and resolving issues early in the day
  • Ensure food is stored correctly and back of house areas remain organised and safe
  • Support and manage Kitchen Porters and prep team performance
  • Write KP rotas and contribute to recruitment and development
  • Complete kitchen audits and maintain strong food safety standards
  • Prepare daily staff food and support charitable meal initiatives
  • Stay ahead of prep requirements to ensure smooth services throughout the week

  • Experienced in a fresh food kitchen environment
  • Highly organised and confident managing prep volumes
  • Calm, methodical and detail-focused
  • Comfortable leading and supporting junior team members
  • Proactive and able to take ownership of your section
  • Passionate about high standards and working as part of a professional brigade
