Junior Sous Chef – Sushi

About the Role

House of Louie is a unique four-storey townhouse in the heart of the West End, bringing together two distinct restaurants and a late-night bar under one roof.

Home to Louie, offering French and New Orleans-inspired cuisine, and Wani Tzuki, our Japanese restaurant specialising in sushi and Japanese dishes, House of Louie offers a vibrant and dynamic hospitality experience from day through to late night.

We’re looking for a passionate and talented Junior Sous Chef – Sushi to join the team at Wani Tzuki. Reporting directly to the Head Chef, you’ll play an important role in maintaining the high standards of our sushi offering, taking responsibility for the sushi section during service and supporting the wider kitchen team.

What You Will Do

• Prepare sushi, sashimi, and specialty rolls with precision, consistency, and creativity

• Take responsibility for the sushi section during service, ensuring smooth and efficient operation

• Work closely with the Head Chef and wider kitchen team to maintain consistently high standards

• Ensure all food meets our standards of freshness, quality, hygiene, and presentation

• Maintain a clean, organised, and food-safe sushi station

• Assist with ordering, stock control, preparation, and minimising food waste

• Support and guide junior kitchen team members, helping to maintain standards and develop their skills

• Lead by example during busy services, remaining calm, focused, and professional under pressure

• Contribute ideas for menu development and new sushi dishes and specials

• Engage with guests when appropriate, sharing product knowledge and enhancing their dining experience

What We’re Looking For

• Minimum 2 years’ experience working with sushi or Japanese cuisine

• Previous experience in a senior chef or supervisory role is desirable

• Excellent knife skills and strong attention to detail

• Good knowledge of fish preparation, handling, storage, hygiene, and food safety

• Ability to confidently manage a sushi section during busy service

• Strong communication and leadership skills

• Calm, organised, and professional under pressure

• Passionate about Japanese cuisine and committed to delivering consistently high standards

• A positive, hands-on team player with a can-do attitude

• Keen to develop their skills and progress within a busy, high-quality restaurant environment
