House of Louie is a unique four-storey townhouse in the heart of the West End, bringing together two distinct restaurants and a late-night bar under one roof.
Home to Louie, offering French and New Orleans-inspired cuisine, and Wani Tzuki, our Japanese restaurant specialising in sushi and Japanese dishes, House of Louie offers a vibrant and dynamic hospitality experience from day through to late night.
We’re looking for a passionate and talented Demi Chef de Partie – Sushi to join the team at Wani Tzuki. Working closely with the Head Chef and senior kitchen team, you’ll play an important role in delivering high-quality sushi and Japanese dishes while maintaining excellent standards of preparation, presentation, hygiene, and consistency.
This is a great opportunity for a chef with experience in sushi or Japanese cuisine who is looking to develop their skills and progress within a busy, high-quality kitchen environment.
What You Will Do
• Assist with the preparation and production of sushi, sashimi, and specialty rolls
• Prepare ingredients to the required standards, including fish, vegetables, rice, and garnishes
• Support the smooth running of the sushi section during service
• Ensure all food is prepared and presented to a consistently high standard
• Maintain excellent standards of freshness, quality, hygiene, and food safety
• Maintain a clean, organised, and food-safe workstation
• Follow recipes, preparation methods, and portion controls accurately
• Assist with stock rotation, storage, preparation, and minimising food waste
• Work closely with the senior kitchen team to ensure smooth and efficient service
• Support other members of the kitchen team when required
• Continue developing your knowledge and skills across sushi and Japanese cuisine
What We’re Looking For
• Previous experience working in a sushi or Japanese kitchen is desirable
• Basic knowledge of sushi preparation and Japanese ingredients
• Good knife skills and attention to detail
• An understanding of food hygiene, safety, and correct food handling
• Ability to work efficiently and accurately in a busy kitchen
• A positive attitude and willingness to learn and develop
• Reliable, hardworking, and well organised
• A strong team player with good communication skills
• Passionate about food and committed to maintaining high standards
