Middle Eight is a new, 180-room lifestyle hotel, with purpose, in Covent Garden: A relaxed, welcoming city hotel which offers more than just a room for the night. We offer a holistic, immersive experience, that changes throughout the day, in spaces which reflect our local community.
The hotel stands on the location of Kingsway Hall, until recently this was home to one of the country's foremost recording venues. The hotel reflects the performance culture of Covent Garden, and takes inspiration for its name from its musical history. Traditionally, a middle eight is used to inject variety into a song. It lifts the composition by changing key or tempo and stepping away from the obvious and the repetitious, yet it remains at home within the whole. The hotel does the same. It enhances Covent Garden and offers something new, different and exciting whilst still feeling like part of the neighbourhood.
Sycamore Vino Cucina: our restaurant with Italian inspired menu and vibrant bar area.
The Balcony: the lounge and all-day dining area, a quiet place for dining and reading.
QT: our basement bar and performance venue.
Our bedrooms are super-stylish, luxurious and full of innovative technology. Our suites have either indoor gardens or outside terraces.

We are looking for a Night Chef who has a real flair and passion for service, who will be able to run our 24-hour room service menu, taking responsibility for the effective execution of all dishes and ensuring consistent presentation to the hotel guest's satisfaction during the night operation of the kitchen.

Your duties will include:
  • The preparation of room service orders following the standards and technical specifications.
  • Preparation for the next day's service as required by the Executive Chef.
  • Responsible for ensuring the highest quality of food is prepared and served.
  • Assist in overall quality control across the kitchen during the night operation.
  • Support in the training and development of junior chefs within the team.
  • Partner with the Room Service and Restaurant and Bar Teams to ensure smooth food service to guests and in-room dining.
The ideal candidate will have the following skills:
  • Previous experience working as a Chef de Partie within a quality restaurant or hotel environment.
  • Passion for food and quality ingredients.
  • An excellent team play and have a professional approach to your role.
  • Level 2 culinary education (NVQ or equivalent)
  • Able to demonstrate culinary expertise and knowledge of all food allergens.
  • Good understanding of food safety management systems and UK Health and Safety regulations
If you can demonstrate the following skills, that would be an advantage:
  • Good people management skills
  • First aid at work qualification
Your hours of work
Reporting to the Executive Chef, with communication lines to the Night Manager, the role is full-time, 40-hours per week, working 23:00 to 07:00 5 out of 7 shifts per week, with a 30-minute break included.

The rewards of the role:

  • Holiday entitlement for full time is 28 days per year, including public and bank holidays, increasing to 33 days with long service anniversaries, pro-rata for part-time staff.
