NIJŪ, where Japanese tradition meets modern elegance, is looking for a dedicated Sous Chef to support the day-to-day running of our kitchen and work closely with our Executive Chef.

About Us

Led by and under the day-to-day leadership of Chris Golding, our kitchen is driven by respect for ingredients, disciplined technique, and a collaborative team culture.

The Role

As Sous Chef, you will play a key leadership role in the kitchen, working side-by-side with Executive Chef Chris Golding to deliver consistently exceptional food while nurturing and developing the brigade.

You will help set standards, lead services, and ensure the kitchen operates smoothly, efficiently, and safely. This is a hands-on role for a chef who leads by example and takes pride in supporting both people and product.

Key Responsibilities
  • Support the Executive Chef in all aspects of kitchen operations

  • Lead and motivate the kitchen team during service

  • Maintain exceptional food quality, consistency, and presentation

  • Uphold hygiene, health & safety, and food safety standards

  • Assist with training, mentoring, and developing junior chefs

  • Support ordering, stock control, and waste management

  • Contribute to menu execution and seasonal development

  • Foster a calm, respectful, and professional kitchen culture

What We Offer
  • Competitive Salary – Based on experience

  • Shared Service Charge – We reward collective success

  • Delicious Team Meals

  • 50% Discount Across All Our Restaurants

  • Tailored Training & Development – Learn and grow with us

  • Birthday Day Off

  • Annual Christmas Party

  • Supportive Head Office & Senior Chef Team

  • Wagestream – Flexible access to earned wages

  • 28 Paid Annual Holidays

What We’re Looking For
  • A Strong Team Player & Kitchen Leader

  • Passion for high-quality, detail-driven cooking

  • Experience as a Sous Chef or Senior Chef de Partie in premium or high-end hospitality

  • Calm, organised, and confident during service

  • A mentor mindset — you enjoy developing others

  • Strong understanding of kitchen operations and food safety

  • Resilient, adaptable, and committed to excellence
