Summary

The Steward is responsible for general sanitation and cleaning of all back of house areas. The stewarding position upholds the Virginia Department of Health cleanliness and sanitation standards. Maintenance of the dish machine and care of other sanitation tools are essential to this role. Maintaining the cleanliness of the dish machine area, basin sinks, and other culinary areas is required.

ESSENTIAL FUNCTIONS

  • Thorough cleaning of all plates, utensils, and kitchen tools.
  • Deep cleaning and organization projects as needed or delegated by management.
  • Proper scrubbing and storing of all pots and pans.
  • Upkeep and cleaning of the employee dining area.
  • Daily sweeping and mopping of kitchen floors, before service and after service and as directed.
  • Cleaning of all floor drains and catches.
  • Assisting with polishing of service ware as needed.
  • Organization of all storage areas for non-food items and cleaning supplies.
  • Communicate when cleaning supplies run low.
  • Pressure washing of floors as directed.
  • Proper cleaning and maintenance of dish machine.
  • Stocking and maintaining hand soap and hand towel stations.
  • Assisting with other cleaning and maintenance projects as prescribed by culinary management.
  • Polishing of copper service ware as needed.
  • Other duties, as assigned.

QUALIFICATIONS

Required

  • Ability to work nights and weekends.
  • Access to a reliable mode of transportation.
  • Servsafe certified within 6 months.
  • Capable of following direction and completing tasks given in a timely manner.
  • Self-motivated to work diligently and at speed particularly during service.
  • Strong team player.
  • Desire to work quickly and efficiently.

Desirable

  • Minimum of one year stewarding experience in a food establishment.
  • Bilingual in Spanish and English.

SKILLS

  • Attention to detail when cleaning.
  • Able to handle china and glassware with care.
  • Quickly and efficient work manner
  • Able to follow direction and completing tasks given in the required time
  • Self-motivated to work diligently particularly during dinner service.
  • Strong communication skills.

PHYSICAL DEMANDS

  • Ability to lift 50 lbs.
  • Ability to stand for long periods of time (8-10 hours consistently).
  • Requires exposure to hot pans, sharp knives, open flames, and temperatures ranging from hot to cold.
  • Availability and understanding that the position often requires hours more than a standard workweek (40-50 hours).
