About the Role

Pincho is looking for an experienced, hands-on Director of Operations to lead our restaurant operations across all locations. This is a field-based leadership role; you'll be in our restaurants, working directly with District Managers and General Managers to drive performance, uphold our standards, and grow our brand. If you're a multi-unit restaurant leader who thrives on the floor, not behind a desk, this role is for you.

As Director of Operations, you will be accountable for profitability and operational performance across all Pincho locations, ensuring consistency, compliance, and top-tier hospitality every step of the way. You'll report directly to the Brand President and play a key role in shaping the future of our brand.

What You'll Do
  • Lead Operating Systems: Directly manage District Managers, ensuring compliance with company policies and procedures across every location.
  • Build & Develop Teams: Recruit, mentor, and develop strong leaders; including Managers, District Managers, and incoming Managers in Training (MITs).
  • Support Frontline Leadership: Guide DMs and General Managers on onboarding new MITs and tracking their training progress.
  • Bridge Home Office & Field Teams: Partner with our Home Office to deliver consistent messaging and open communication between restaurants and corporate.
  • Drive Profitability & Performance: Own key performance indicators, exceed sales targets, and consistently deliver an outstanding guest experience.
  • Lead New Restaurant Openings: Execute pre-opening operations, staffing, and marketing initiatives to ensure every new location launches successfully.
What You Bring
  • Bachelor's degree preferred
  • 10+ years of multi-unit restaurant management experience
  • 5+ years of leadership/supervisory experience in the restaurant industry
  • Project management experience
  • Strong business acumen and a proven ability to develop people and build high-performing teams
  • Excellent communication, presentation, and interpersonal skills
  • A self-motivated problem-solver who can navigate complex, fast-paced situations
  • Proficiency with MS Office
