The role

As a General Manager at Prezzo Italian, this restaurant is yours. You set the standard, build the team, and decide what kind of place it is to eat and to work.

We mean that. Our GMs choose their own local specials. They know their community and are trusted to act on it. Our support office is there to back you, not to second-guess you.

At Prezzo Italian, it all comes down to two things: the impression we make and the connections we build. Every guest should leave feeling genuinely looked after, not just served. That starts with how we treat each other. Teams who look out for one another, have fun together and take pride in what they do create the moments guests remember and come back for. As GM, you set that tone.

What you'll be responsible for

Leading your team

• Recruit, train and develop a team that delivers exceptional hospitality with warmth and confidence.
• Build a team that genuinely connects, with each other and with every guest, and makes a lasting impression every time: clear standards, honest feedback, and wins celebrated out loud.
• Develop your team, identifying and nurturing top talent and giving them the same chances to grow that we'll give you.
• Plan rotas that balance guest demand, labour cost and your team's wellbeing.

Delighting guests

• Be the face of the restaurant, on the floor at the moments that matter, making sure every guest's first and last impression is one they remember.
• Deliver the Italian classics exactly as they should be, every shift, every plate.
• Turn first-time visitors into regulars and Club Prezzo members.
• Handle feedback with grace and use it to get better.

Running a successful business

• Own your P&L: drive sales, manage costs and protect margin.
• Spot local opportunities and act on them, from specials to community partnerships and local marketing.
• Grow every channel, including dine-in, dine-at-home and events.
• Use data and KPIs to make sharp decisions, and explain them clearly.

Keeping standards high

• Lead on food safety, health and safety, licensing and People compliance.
• Keep the restaurant looking and feeling the way our guests now expect.
• Manage stock, cash and security with care.

What we're looking for

You've run a restaurant, or you're a senior manager who is ready to. You know what a great Friday night feels like, and you know what it takes to get there.

• Proven leadership as a General Manager or senior manager in busy, guest-focused hospitality.
• Commercial instinct. You've grown sales, hit KPIs and can read a P&L without flinching.
• A people-first approach. Your best results come through the team you've built and the people you've developed.
• Pride in food and exceptional hospitality. You notice the details, and you care when something isn't right.
• Ownership. You'd rather be trusted to make the call than told what to do.
• Solid knowledge of People practices, licensing, food safety and health and safety.
