Assistant Manager, Prezzo Italian

The best General Managers of tomorrow are the Assistant Managers we develop today.

You can't miss Prezzo Italian right now. Our refurbished restaurants look stunning, with more on the way, and the food has never been better. Guests are noticing and the momentum is real. Now we need Assistant Managers who are ready to lead alongside their GM and grow into true restaurateurs.

Who we are

Brava Hospitality Group is the home of great restaurant brands. We're the group behind Prezzo Italian, in towns and cities right across the UK, and a collection of much-loved central London restaurants: Jamie's Italian, Riding House Café, Nessa, Yasmin, Mortimer House Kitchen and, most recently, Bolo by Gennaro. And we're growing the footprint of every one of our brands. We're restaurant people at heart, and we believe every guest deserves brilliant food and exceptional hospitality from teams who love what they do.

Prezzo Italian has been bringing the Italian classics to towns and cities across the UK since 2000. For our 25th birthday we gave it a fresh start: a brand-new look, beautifully redesigned restaurants, and a menu built around the dishes people love, made fresh and cooked properly. Prezzo Italian is the home of the Italian classics.

We're a business on the way up, and the people who join us now will shape where it goes next.

The role

As an Assistant Manager at Prezzo Italian, you're your General Manager's right hand. You run shifts with confidence, lead the team on the floor, and step up to run the restaurant when your GM isn't there.

At Prezzo Italian, it all comes down to two things: the impression we make and the connections we build. Every guest should leave feeling genuinely looked after, not just served. That starts with how we treat each other. Teams who look out for one another, have fun together and take pride in what they do create the moments guests remember and come back for. As Assistant Manager, you help set that tone on every shift.

You'll be joining at the moment the hard work starts paying off. The food is right, and with every restaurant in our estate set to be refreshed over the next 18 months, there's plenty more to come. This is the place to learn what it takes to run a restaurant, with a GM and a support office invested in getting you there.

What a great first year looks like: shifts that run smoothly whoever is on, a team that trusts you, guests who come back by name, and a GM who knows you're ready for your own restaurant.

What you'll be responsible for

Leading your team

•      Lead shifts from the front, setting the pace and the standard for exceptional hospitality.

•      Build a team that genuinely connects, with each other and with every guest, and makes a lasting impression every time.

•      Help recruit, train and develop the team, identifying and nurturing top talent.

•      Support your GM with rotas that balance guest demand, labour cost and your team's wellbeing.

Delighting guests

•      Be a visible presence on the floor, making sure every guest's first and last impression is one they remember.

•      Make sure the Italian classics go out exactly as they should, every shift, every plate.

•      Turn first-time visitors into regulars and Club Prezzo members.

•      Handle feedback with grace and use it to get better.

Running a successful business

•      Help your GM drive sales, manage costs and protect margin.

•      Bring ideas for local specials, community partnerships and local marketing.

•      Use KPIs to spot what's working and what needs attention.

•      Run the restaurant in your GM's absence, owning every decision on the day.

Keeping standards high

•      Lead on food safety, health and safety, licensing and People compliance on every shift.

•      Keep the restaurant looking and feeling the way our guests now expect.

•      Manage stock, cash and security with care.

What we're looking for

Are you a Prezzo person? You're warm, genuine and generous with your time. You love great food and you love people even more. You make every guest feel welcome from the moment they walk in, you lift the team around you, and you take pride in getting the little things right. You bring energy, a sense of fun, and the confidence to make the call.

You're an Assistant Manager already, or a strong Duty Manager or supervisor who is ready for the next step.

•      Experience leading shifts in busy, guest-focused hospitality.

•      Commercial awareness. You understand what drives sales and costs, and you want to learn more.

•      A people-first approach. You coach in the moment and bring out the best in others.

•      Pride in food and exceptional hospitality. You notice the details, and you care when something isn't right.

•      Ambition. You want to run your own restaurant one day, and you're ready to learn how.

•      Working knowledge of licensing, food safety and health and safety.

Come from another casual dining brand, a pub group, hotels or fine dining? Great. What matters most is how you lead, not where you've led.

What's in it for you

You'll give a lot to this role. Here's what we give back.

Reward

•      Tronc, so you share in the success of a busy restaurant

•      Company pension scheme

•      Life assurance at 2x your salary

•      Paid holiday allowance

•      Refer a friend and earn up to £1,000

Time and wellbeing

•      Your birthday off, every year

•      Free or heavily subsidised meals on shift

•      24/7 GP helpline and Employee Assistance Programme (EAP)

•      Stream (formerly Wagestream), our financial wellbeing app: access pay you've already earned, save straight from your pay, and get tools and guidance to manage your money

•      Free regulated mortgage advice

Perks

•      50% off at Prezzo Italian

•      25% off at every other Brava restaurant

•      Share 25% off with up to 5 friends and family, even when you're not there

•      Free Tastecard and the Hospitality Rewards app for retail discounts

•      Electric car scheme after one year's service

Your future

•      Ongoing development and coaching

•      A clear path to General Manager

•      Opportunities across our other brands

•      Secondments and projects in our support office
