We are now looking for a Bar Manager to lead and shape the bar offering at Sale e Pepe Mare. This is a key leadership role within the opening structure, responsible for delivering a high-quality, commercially strong, and guest-focused bar operation.

The Role – Bar Manager
As Bar Manager, you will be responsible for the overall performance of the bar, from concept and menu development through to daily operations and team leadership.
The Bar Manager will work closely with the Head Chef and senior management team to ensure the bar offering complements the food menu, enhances the guest experience, and delivers strong financial performance.
You will lead from the front, ensuring consistently high standards, driving team engagement, and creating a bar environment that reflects the quality and reputation of Sale e Pepe Mare.
Key Responsibilities
Lead all aspects of the bar operation, including
service standards, team management, and performance
Develop and maintain a high-quality cocktail and beverage offering aligned with
the brand
Work closely with the kitchen and senior team to ensure a cohesive food and
drink experience
Train, develop, and inspire the bar team to deliver consistent and engaging
service
Manage stock, GP, ordering, and supplier relationships effectively
Ensure compliance with all health, safety, and licensing regulations
Maintain exceptional standards of cleanliness, organisation, and presentation
Drive revenue through product knowledge, upselling, and service excellence
What We’re Looking For
Proven experience as a Bar Manager or Senior Bar
Supervisor in a premium or high-volume environment
Strong cocktail and beverage knowledge, with a focus on quality and consistency
A hands-on leader who is confident managing busy services
Commercially aware, with experience managing costs and driving revenue
Excellent communication and team leadership skills
Highly organised, with strong attention to detail
A genuine passion for hospitality and guest experience
