Set within the iconic The Langham, London, Sale e Pepe Mare marks a refined evolution of one of London’s most celebrated Italian restaurants. Inspired by the elegance of Italy’s coastline, the restaurant brings together exceptional seafood, timeless Italian hospitality, and a vibrant, sophisticated bar experience.

We are now seeking a talented and driven Assistant Bar Manager to support the leadership of our bar team and help deliver a best-in-class drinks programme in one of London’s most prestigious settings.

The Role:  Assistant Bar Manager

As Assistant Bar Manager, you will play a key role in the daily operation of the bar, working closely with the Bar Manager to ensure consistency, quality, and an exceptional guest experience at all times.

The Assistant Bar Manager will support the delivery of a refined cocktail, wine, and aperitivo offering, reflecting the spirit of coastal Italy while maintaining the highest standards of service and presentation.

This is a hands-on leadership role, ideal for a confident Assistant Bar Manager who thrives in a fast-paced, high-end environment and takes pride in both team development and operational excellence.

Key Responsibilities

  • Support the Bar Manager in the day-to-day running of the bar
  • Lead service from the front, ensuring a seamless and engaging guest experience
  • Assist in the development and execution of the drinks programme
  • Train, coach, and motivate the bar team to deliver consistently high standards
  • Maintain strong product knowledge across cocktails, wines, and spirits
  • Oversee stock control, ordering, and cost management alongside the Bar Manager
  • Ensure compliance with health & safety and licensing regulations

What We’re Looking For

  • Proven experience as an Assistant Bar Manager or Senior Bartender within a premium or luxury environment
  • Strong knowledge of classic cocktails, Italian aperitivo culture, and wine
  • A natural leader with a hands-on, positive approach to team management
  • Excellent communication and organisational skills
  • Passion for hospitality, detail, and creating memorable guest experiences
  • A proactive mindset with the ability to perform under pressure
