This new opening brings together two renowned London institutions to create a landmark destination for coastal Italian cuisine, combining timeless hospitality with contemporary Mediterranean elegance.

We are now seeking a talented and hands-on Bar Manager to lead the bar operation at Sale e Pepe Mare. This is a fantastic opportunity for someone who thrives in a refined, guest-focused environment and enjoys leading a smaller, close-knit team with genuine attention to detail.

As Bar Manager, you will oversee a compact and highly service-driven bar team, ensuring exceptional standards, consistency, and a warm, polished guest experience throughout service. This role is ideal for a leader who enjoys being present on the floor, developing people, and creating a strong team culture within a luxury hospitality setting.

The Role

As Bar Manager, you will:

• Lead and inspire a small bar team in a premium restaurant environment
• Deliver exceptional guest experiences through attentive and personalised service
• Maintain consistently high standards across cocktails, wines, spirits, and bar presentation
• Support recruitment, training, coaching, and development within the bar team
• Work closely with senior management to drive service standards and operational excellence
• Ensure smooth day-to-day bar operations, including stock control and ordering
• Build a positive and collaborative culture within the wider restaurant team
• Take full ownership of the guest journey at the bar and lounge areas

We Are Looking For Someone Who:

• Has previous experience as a Bar Manager or Assistant Bar Manager within a quality-led restaurant or luxury hospitality environment
• Is confident leading a smaller team and enjoys a hands-on management style
• Has strong cocktail, wine, and beverage knowledge
• Is highly organised with excellent attention to detail
• Leads by example and remains calm under pressure
• Has excellent communication and leadership skills
• Is passionate about hospitality and creating memorable guest experiences
• Has the right to live and work in the UK
