• Design & develop state-of-the-art high-efficiency commissary bakeries.
• Identify, test, and implement cutting-edge commissary and bakery technology
• Lead and develop a high-performing team, fostering a culture of accountability and collaboration.
• Collaborate cross-functionally with logistics, culinary, and leadership to align production with demand.
• Implement and monitor SOPs
• Implement hub & spoke delivery logistics.
• Improve efficiency, reduce waste, and scale output.
• Oversee bakery production, commissary operations, and shift scheduling.
• Ensure quality, consistency, and compliance with food safety standards (HACCP, FDA, local regulations).
• Track and report KPIs (labor %, yield, downtime, etc.) to drive continuous improvement.
• Maintain and troubleshoot equipment and oversee preventative maintenance programs.

• 8+ years of experience in commissary food manufacturing or commercial baking leadership.
• Located in or weekly travel to St. George, UT for the first 12 months
• Deep knowledge of food safety, quality assurance, and production best practices.
• Strong operational and process mindset with the ability to scale systems.
• Track record of leading and developing frontline and supervisory teams.
• Data-driven decision maker with experience using KPIs to optimize performance.
• Hands-on, humble leader who thrives in a fast-paced, growth-oriented environment.
