Salary: Up to £30,000 per annum (depending on experience, discussed at interview)
Hours: Full-time, 40+ hours over 4 days (including weekends & bank holidays)
Additional: Share of service charge (approx. £2,000 annually)

About the Role

We are looking for a talented and passionate Demi Chef de Partie to join the team at Geko, our Japanese-inspired restaurant located within Seaham Hall and Serenity Spa.

Inspired by the Japanese word for moonlight, Geko captures the tranquil beauty of County Durham’s starlit skies. Our concept reimagines spa dining with a focus on wellness, balance, and connection. Guests enjoy a calm, contemporary setting alongside a small-plate menu designed for discovery, variety, and mindful indulgence.

This is an exciting opportunity for a skilled Commis Chef ready to take the next step in their career within a high-quality, award-winning environment.

Key Responsibilities

• Support the kitchen team in delivering high-quality dishes to a 5-star standard
• Assist with stock control, ordering, and minimising waste
• Maintain excellent standards of cleanliness, hygiene, and food safety
• Work collaboratively with the wider kitchen and front-of-house teams
• Ensure consistency, presentation, and attention to detail in all dishes

About You

• Minimum 1 year of professional kitchen experience
• Strong understanding of stock control and ordering processes
• Good knowledge of Health & Safety procedures, including COSHH and HACCP
• Valid Food Hygiene Certificate (within the last 3 years)
• Own knives required
• Excellent communication and teamwork skills
• High attention to detail and pride in delivering exceptional standards
• Professional, reliable, and well-presented at all times
• Ability to work independently and as part of a team
• Must have own transport due to location and shift patterns
