We are looking for a talented General Manager with a passion for exciting food. We are looking for a friendly, genuine, and hardworking individual, passionate about great food, drinks, and delivering exceptional customer experiences. Strong leadership skills, and a keen eye for financial management are a must.

Located in the heart of Soho London, Señor Ceviche showcases Peru's diverse flavours and cooking techniques.

With over 30 microclimates, Peru has a rich variety of homegrown ingredients. It’s no surprise that so many people have travelled to South America’s gastronomic hub, dating back over 500 years to when the Spanish arrived with European ingredients, to the more recent Japanese and Chinese, bringing with them Asian ingredients and cooking techniques, making Peruvian cuisine the ultimate fusion food

Key Responsibilities:

  • Manage high-volume operations: Oversee daily operations, ensuring smooth service, especially during peak hours.
  • Table Service: Ensure smooth, efficient, and professional table service to create a welcoming environment for customers dining in.
  • Financial and Compliance Management: Maintain profitability by overseeing budgets, stock levels, and payroll. Ensure full compliance with licensing laws, H&S regulations, and local council guidelines.
  • Health & Safety: Uphold the highest standards of health and safety across the restaurant, from staff training to risk assessments and hygiene protocols.
  • Team Leadership: Motivate, train, and develop a diverse team, ensuring excellent customer service, quality standards, and efficient service delivery.
  • Drinks Expertise: Manage our cocktail and wine offerings, ensuring a high standard of quality, keeping up with industry trends, and offering recommendations to customers.
  • Customer Relations: Create an environment where customers feel welcome, valued, and eager to return.

Key Requirements:

  • Previous Experience: Must have prior experience in a high-volume restaurant, ideally within a similar environment.
  • Financial Acumen: Strong understanding of managing restaurant finances, including stock control, P&L, and budgeting.
  • Compliance & H&S Knowledge: In-depth knowledge of UK licensing laws, H&S regulations, and industry standards.
  • Table Service Skills: Proven experience in managing table service operations in a busy setting, ensuring quality service and customer satisfaction.
  • Passion for Cocktails & Wine: A genuine interest in cocktails, beers, wines, and crafting unique beverage experiences.
  • Leadership: Proven ability to lead a team under pressure and deliver exceptional service.
  • Proactive & Customer-Focused: A hands-on, can-do attitude and a focus on customer satisfaction.
