Job Description

At Somewhere Nowhere (SWNW) we’re looking for happy, creative, energetic, ambitious, and positive people to join our team. The Prep cook is responsible for cooking and preparing a variety of food products using a variety of equipment and utensils according to the Daily Prep List. He/she is also responsible for ensuring the cleanliness, sanitation and safety in the kitchen and work areas while minimizing waste and maximizing cost/production ratio. Additional requirements below:

General Responsibilities

  1. Complete opening and closing checklists

  2. Cook and prepare a variety of food products using a variety of equipment and utensils according to the Daily Prep List

  3. Follow and prepare all recipes according to recipe book

  4. Responsible for ensuring the cleanliness, sanitation and safety in the kitchen and work areas while minimizing waste and maximizing cost/production ratio

  5. Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking

  6. Understands and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures

  7. Portions food products prior to cooking according to standard portion sizes and recipe specifications

  8. Have thorough knowledge of menus and the preparation required, according to SWNW standards

  9. Memorize and utilize our serving portion sizes and all basic meal prep procedures used in the kitchen

  10. Follow the standards and plating procedures of the Chef/Kitchen Manager

  11. Inform Chef/Kitchen Manager immediately of product shortages

  12. Recognize quality standards in fresh vegetables, fish, and dairy and meat products

  13. Knowledge of herbs and spices and proper use of each
  14. Maintain clean, sanitary kitchen equipment and work station with knowledge of proper handling, sanitation and organization of all storage areas
  15. Use prep list as specified by standards
  16. Ensure that the kitchen, all food prep areas and all food storage areas meet cleaning standards

  17. Work with team of cooks to do portion prep work for other shifts when needed

  18. Monitor product freshness and rotate out old product based on a schedule created by the venue

  19. Remove labels and properly label all food items

  20. Performs other related duties as assigned by the Chef/ Kitchen Manager

  21. Properly store and label food to health department standards

Required Skills

  1. Excellent critical thinking and time management skills

  2. Culinary experience required.

  3. High volume production, technical skills and multitasking required

  4. Ability to operate industrial machinery and carry loads up to 40 lbs

  5. Willingness to work in hot, humid environment and on your feet for 8 hour shifts

  6. High level of professionalism

  7. Comfortable working with a team in a fast-paced kitchen environment
