Position Summary
The Prep Cook plays a key role in supporting daily kitchen operations by ensuring all ingredients and mise en place are prepared to Spago’s exacting standards. This position requires strong attention to detail, efficiency, and a passion for quality and consistency.
Responsibilities
Prepare and organize all ingredients for service, following standardized recipes and chef instructions.
Wash, peel, chop, cut, and measure ingredients precisely according to menu requirements.
Maintain cleanliness and organization of prep stations, storage areas, and refrigeration units.
Label, date, and properly store all prepared items to maintain freshness and prevent waste.
Assist with receiving, checking, and storing deliveries.
Follow all safety and sanitation policies in compliance with health department regulations.
Communicate effectively with line cooks and chefs to ensure seamless kitchen operations.
Support kitchen team during service as needed.
Qualifications
Minimum 1 year of culinary experience in a professional kitchen; fine dining experience preferred.
Strong knife skills and understanding of basic cooking techniques.
Ability to follow recipes, directions, and portion standards accurately.
Reliable, punctual, and able to work well in a fast-paced, team-oriented environment.
Knowledge of food safety, sanitation, and proper storage procedures.
Culinary education or formal training is a plus.
