Job SummaryThe Back Busser (Polisher & Barista) supports the Front-of-House team by polishing glassware, silverware, and service pieces to fine-dining standards; maintaining pristine work areas; and ensuring stations including scullery, linen room, and barista station remain organized and fully stocked. This role also prepares specialty coffee and tea beverages and contributes to the overall flow of service. The ideal candidate is detail-oriented, efficient, and committed to excellence in every task.
Essential Job Functions Polishing & Service SupportClean and polish all glassware, silverware, china, and specialty items to Spago’s fine-dining standards.
Ensure polished items are spotless, streak-free, and properly stored in designated areas.
Handle delicate glassware and service pieces with care and precision.
Assist servers and bussers by replenishing polished wares throughout service.
Maintain the cleanliness, setup, and organization of polishing stations, scullery areas, and the linen room.
Prepare and serve a variety of specialty coffee and tea beverages according to established recipes.
Maintain a clean, sanitary, and well-organized barista station at all times.
Restock coffee supplies, syrups, tools, and equipment as needed.
Support servers with beverage service, particularly during high-volume periods.
Maintain restrooms (guest and staff) by ensuring cleanliness and stocking of soap, paper towels, and supplies throughout operating hours.
Assist with service station setup, breakdown, ice refills, storage organization, and par-level restocking.
Retrieve, polish, and store china, glassware, silver, and other items from stewarding.
Support the flow of service by anticipating team needs and offering assistance.
Perform additional job-related duties as assigned by management.
Education:
High School Diploma or GED required.
Preferred Experience:
1+ years experience as a busser or back-of-house support in a high-volume or fine-dining environment.
Barista or coffee preparation experience strongly preferred.
Knowledge of dining room procedures and fine-dining service standards.
Additional Requirements:
Self-motivated, with excellent attention to detail and pride in work quality.
Ability to stand for extended periods and work in a fast-paced, high-volume environment.
Must be available to work evenings, weekends, and holidays.
Strong organizational skills and ability to maintain a clean, orderly workspace.
Effective verbal and written communication skills.
Ability to work under pressure while maintaining composure and focus.
Team-oriented mindset with willingness to assist colleagues across departments.
Strong service orientation and desire to support exceptional guest experiences.
Professional demeanor and positive attitude.
Frequent standing, bending, lifting (up to 25 lbs regularly; up to 40 lbs occasionally).
