Job SummaryThe Food Expeditor / Food Runner plays a central role in coordinating the flow of communication between the kitchen and dining room. This position ensures every dish is correctly prepared, beautifully presented, fired on time, and delivered promptly to the guest. Working closely with chefs, servers, and management, the Expeditor/Runner maintains Spago’s high standards of consistency, quality, and service excellence.
Essential Job Functions Expediting & CoordinationOrganize, prioritize, and call food tickets with accuracy and urgency.
Ensure efficient communication flow between servers and kitchen teams.
Verify plating, temperature, garnishes, and presentation for every dish before it leaves the pass.
Lead and direct food runners during service to ensure seamless, timely delivery.
Maintain a deep understanding of all menus, ingredients, preparation styles, allergen information, and modifications.
Deliver dishes to the correct guest with precision, professionalism, and grace.
Anticipate guest and service needs, responding proactively without waiting for direction.
Serve and clear food in an unobtrusive, elevated manner aligned with Spago’s fine-dining service standards.
Provide friendly, polished, and attentive service at all times.
Assist in setting up and breaking down the pass, stations, and dining room.
Ensure proper stocking, organization, and sanitation of expediting areas.
Communicate clearly and efficiently with chefs and servers regarding order status, timing, and special requests.
Uphold all health, safety, and sanitation guidelines.
Complete all opening, mid-shift, and closing sidework as assigned.
Perform additional job-related duties assigned by management.
High School Diploma or GED required.
Minimum 1-2 years of expediting or food running experience in a high-end or fine-dining restaurant.
Strong knowledge of fine-dining service standards and dining room operations.
Proven ability to lead, delegate, and coordinate effectively in a fast-paced environment.
Open availability, including evenings, weekends, and holidays.
Exceptional communication skills, both verbal and written.
Highly organized with outstanding attention to detail.
Ability to multitask and maintain composure under pressure.
Strong leadership presence with the ability to direct support staff confidently.
Deep service orientation — consistently looking for ways to assist both guests and team members.
Professional appearance, demeanor, and positive attitude.
Ability to anticipate needs and think proactively.
Ability to stand, walk, and move for extended periods.
Frequent bending, lifting, reaching, and carrying (up to 25 lbs regularly; up to 40 lbs occasionally).
Ability to work in a fast-paced environment with exposure to heat, steam, and kitchen equipment.
Must have full range of vision to ensure accuracy in food quality and presentation.
Primarily indoors between dining room and kitchen; moderate to loud noise levels depending on service.
