SOUS CHEF – COMPETITIVE SALARY & TRONC

We are looking for a dynamic and highly skilled Sous Chef to join us at The Tellers Arms, a beautiful Young’s pub with 9 boutique bedrooms, proud of its history as a former bank in the heart of Farnham.

We don't just serve food—we serve gloriously good food. Our reputation is built on delivering a proper pub menu packed full of nostalgia and modern twists. We work with fresh, seasonal ingredients to perfect every plate, from our hearty Full English breakfast to our legendary Sunday roasts (a reputation we aim to uphold as the 'Best in Farnham'). We are not just a pub; we are a destination for great food.

The Kitchen & The Role

As the newest addition to Farnham’s Castle Street, our kitchen and equipment are in superb condition. This is a chance to step into a high-standard, professional environment where you can truly lead and create.

As Sous Chef, you will be a key leader, responsible for:

  • Autonomy in Dishes: Designing and delivering new dishes for our menus and daily specials, with full autonomy within the pub's vision.
  • Quality Control: Being an active, hands-on presence, championing consistency and the high standards that define the reputation of all food leaving the pass.
  • Team Leadership: Taking charge of the kitchen staff rota, training, and all health and safety protocols.
  • Financial Control: Demonstrating strong planning and organisational skills necessary to maintain effective controls with regard to GP and labour management.

  • Salary: £38,000 per year plus TRONC circa £5,000/annum
