SUMMARY
1. The Assistant Director of Wine is a stepping stone position allowing for grooming/training of an individual for eventual succession into the Director of Wine position. The focus of this position, aside from full time sommelier responsibilities, will be learning the skills necessary to move towards the Director of Wine position.
2. Assistant Director of Wine (ADoW) will support the DoW in all day to day responsibilities. This includes but is not limited to purchasing, receiving, storage, distribution and security of all wine and beverage product, daily maintenance of all wine lists, updating and keeping POS system current, staff training and COGS tracking, month end and daily wine inventory. As well, nightly sommelier duties are part of this job (see sommelier job description). Acts as de facto DoW in the absence of the DoW
ESSENTIAL FUNCTIONS
1. Assist and support the daily needs of the DoW
2. Act as sommelier on the floor
3. Assist in the receipt and storage of all wine product in their proper areas
4. Act as de facto DoW in the absence of the DoW
5. Updates daily cost credit sheets
6. Restocks of wines from Main Cellar to Day Cellar daily
7. Email an accurate BTG and Pairing wine inventory every Sunday
8. Monthly inventory with DOW
9. Accept weekly wine deliveries which includes attention to the following:
10. Maintain Cellars Organization and Cleanliness
11. Responsible for accuracy and updating of Cellar keys
13. Maintain the ongoing security of all wine assets
14. Lead and manage Sommelier Team when DoW isn’t present
15. Ensure daily SOP is being followed
QUALIFICATIONS
Required
1. 5 + years floor experience as sommelier in high-end restaurant/ hotel
2. 5 + years experience assisting in the organization and upkeep of a large (1000+ selection) wine cellar
3. Excellent and effective trainer
4. Pursuing certification through a recognized certification organization (W.S.E.T./C.M.S.)
5. Certified or Advanced standing with W.S.E.T./C.M.S.
6. Experience working with a large cellar (1000+ selections) or with a Wine Spectator Grand Award cellar
7. Basic understanding of the business of wine (purchasing, costs, asset protection).
Desirable
1. 5+ years supervisory responsibility
2. 2+ years working in a Forbes rated property

SCHEDULE
1. The typical schedule for this position will be 5 days a week with Monday and Tuesday being usual days off.
2. This schedule will, however, be dictated by operational needs and may be changed at any time to accommodate those needs.
