  SUMMARY 'The Director of Restaurant Operations will be responsible for the planning, management, organization, and development of all operational aspects of the food and beverage services for The Inn at Little Washington restaurants. Directly supervises, develops, and supports all projects and team members directly or indirectly. Responsible for maintaining strict standards and expectations, P&L, budgeting, and labor cost; and training and developing of staff. T'his position reports to the General Manager.

 Essential Functions

  • Responsible for the direction, development, and training of all service and culinary personnel, to maintain a high level of service, appearance, and skill 
  • Ensure maximum guest satisfaction 
  • Achieve financial results and maximizing profits 
  • Developing a strong team that is focused on the culture and growth for the future
  • Create a quality teamwork environment 
  • Practice excellent communication skills, verbal and written
  • Oversee supervision, hiring and training of all culinary and FOH employees
  • Continue the stories and foundation of the Inn at Little Washington 
  • Negotiate contracts with vendors, as needed 
  • Oversee projects related to the restaurants 
  • Maintaining Forbes 5 stars, AAA 5 diamonds, Michlin 3 stars, Grand Award of excellence. 
  • Develops business plans in partnership with the Director of Finance and budgets that achieve business growth (sales and profit) and ensure innovative cost controls in all areas. 
  • Plans and analyzes management needs and training and development of staff.
  • Ensures unit (s) is maintaining excellent brand standards. 
  • Ensures all projects are providing a clean, safe environment for guests and employces.
  • Directs operational policies and procedures for all responsible departments. 
  • Continues to exceed Forbes Standards and deliver the message of Transformativc- Restorative- Life Affirming.
  • Investigates and/or provides support to guest concerns, employee concerns, and other issues, as needed. 
  • Ensures that all facilities are maintained in good working order. 
  • Must have a firm understanding of Michelin star, Forbes, and AAA standards. 
  • Ultimately Responsible for the interviewing and selection process of restaurant staff in keeping with the Inn's standards. 
  • Aware of Relais Chatcau related properties- and 3 Michelin Star service restaurants
  • Always sets a positive, professional, role model example in the field. 
  • Create and nurture an environment that emphasizes motivation, empowerment, teamwork, and a passion for providing service.
  • Continuously evaluate the performance and encourage improvement of the associates in the food & beverage department. 
  • Plan and administer training programs within the departments that will develop associates at all levels. 
  • Be readily available & approachable for all team members. 
  • Assist supervisors in understanding team members' ever-changing needs and expectations and exceed them. 
  • Take proactive approaches when dealing with associate concerns. 
  • Always extend professionalism and courtesy to team members.
  • Celebrate and foster decisions that result in successes as well as opportunities to learn. 
  • Will sit in on Senior Director team meetings to add input as needed for directional decisions for The Inn
  • Partners with Human Resources Director on all employee relations, BUP updates, recruitment, retention and training for departments of responsibility.
  QUALIFICATIONS

Essential:

  • 10+ years' combined experience in the luxury dining segment of the industry 
  • Serve Safe Certification 
  • Comprehensive knowledge of 5-Star/5-1Diamond standards for both Hotels and Restaurants 
  • Extensive knowledge of Patrick O'Connell's biography 
  • Extensive knowledge of the Inn at Little Washington's story; past, present, and future 
  • Familiarity with the current Michelin 3-Star restaurants in the U.S.
  • Flexibility to work on a rotating-shift basis, evenings, weekends, holidays, and off-site events 
  • Must possess an overwhelming desire to please our guests
  • Must be passionate and knowledgeable about food and wine 
  • Must have a firm understanding of food preparation and standards.
  • Must have professional appearance and image. 
  • Must be Sery Safe certified. 
  • Must be Entrepreneurial, energetic, and passionate. 
  • Must have a valid driver license and maintain a good driving record. 
  • Desirable Knowledge of the D.C. restaurant scene & other similar properties 
  • Local area knowledge to recommend day trips, lunch spots, hikes, and places of interest 
  • Prior experience with Resort Suite andTock operating systems 
  • CPR Certification
