The NICI Newquay

Description

ABOUT AMALFI’S & THE NICI

Perched above the Atlantic coastline, THE NICI Newquay brings a fresh approach to luxury hospitality, combining exceptional surroundings, vibrant dining and a relaxed yet sophisticated atmosphere.

At the heart of our food and beverage offering is Amalfi’s, our Italian-inspired restaurant celebrating Mediterranean flavours, exceptional hospitality and the unmistakable energy of coastal living.

We believe that luxury hospitality should feel effortless, personal and memorable. Behind that experience is a passionate team, exceptional attention to detail and an uncompromising commitment to standards.

With the exciting opening of Tucker Rocks planned for Spring 2027, our Food & Beverage operation is entering an important period of growth, creating genuine opportunities for ambitious hospitality professionals to develop their careers.

We are now looking for an exceptional Assistant General Manager to help lead Amalfi’s through its next chapter.

THE ROLE

We are looking for a leader, not simply a manager.

This is a highly visible, hands-on operational role for someone who thrives on the restaurant floor, inspires those around them and takes personal pride in delivering exceptional guest experiences.

Working closely with the Restaurant General Manager, you will be a driving force behind our service culture, operational standards and team performance.

You will lead by example, setting the pace, creating energy and ensuring that every guest receives the warm, attentive and polished service expected of THE NICI.

This is not a role for someone who prefers managing from behind a desk. We want someone who enjoys being in the heart of the operation, coaching the team, engaging with guests and taking ownership of the finer details that turn good service into exceptional hospitality.

You will be expected to challenge complacency, identify opportunities for improvement and consistently raise standards.

Our philosophy is simple:

“What we walk past, we accept – what we accept today becomes tomorrow’s standard.”

We want someone who lives and breathes that principle.

KEY RESPONSIBILITIES

1. Leadership & Operational Excellence

  • Take an active, hands-on role in the daily management of Amalfi’s Restaurant, supporting breakfast, lunch, dinner and private dining operations.
  • Lead service from the floor, maintaining a strong presence during key trading periods.
  • Set and consistently maintain exceptional standards of service, presentation, cleanliness and attention to detail.
  • Ensure every shift is professionally organised, with clear briefings, effective deployment and strong communication.
  • Anticipate operational challenges and take proactive action before they affect the guest experience.
  • Take ownership of service delivery in the absence of the Restaurant General Manager.
  • Work collaboratively with the kitchen and wider hotel management teams to deliver a seamless guest experience.
  • Demonstrate personal accountability and ensure that agreed standards are consistently delivered.

2. Guest Experience & Service Standards

  • Be a visible and approachable host, building relationships with hotel residents, local guests and regular customers.
  • Create a genuine culture of hospitality where guests feel recognised, valued and exceptionally well looked after.
  • Ensure the team consistently delivers confident, knowledgeable and engaging service.
  • Take personal ownership of guest feedback, resolving concerns promptly and professionally.
  • Monitor guest satisfaction, reviews and feedback to identify recurring themes and opportunities for improvement.
  • Champion the small details that elevate the guest experience, from recognising special occasions to anticipating individual needs.
  • Maintain the balance between relaxed, personable hospitality and the precision expected of a luxury lifestyle destination.

3. People Leadership, Training & Development

  • Inspire, motivate and develop the restaurant team through visible leadership and daily coaching.
  • Create a positive, supportive and accountable working environment.
  • Lead by example, demonstrating the behaviours, professionalism and service standards expected of every team member.
  • Support recruitment, induction and structured onboarding of new employees.
  • Ensure team members receive appropriate training in service standards, product knowledge, food, wine and cocktails.
  • Conduct regular briefings and provide constructive feedback and recognition.
  • Identify and develop future supervisors and managers, creating a strong internal talent pipeline.
  • Address underperformance promptly, fairly and constructively.
  • Foster a culture where everyone takes pride in their work and understands their contribution to the overall guest experience.

4. Commercial Awareness & Business Performance

  • Support the Restaurant General Manager in achieving revenue, profitability and operational performance targets
  • Drive sales through confident product knowledge, appropriate recommendations and effective upselling
  • Monitor labour productivity, staffing levels and operational efficiency without compromising service standards.
  • Assist with stock management, purchasing, wastage reduction and cost control
  • Understand key restaurant performance indicators and contribute to continuous improvement
  • Support initiatives to grow local business, repeat visits and restaurant reputation
  • Identify opportunities to enhance the guest experience while improving commercial performance

5. Standards, Compliance & Accountability

  • Maintain the highest standards of food safety, health and safety, hygiene and licensing compliance
  • Ensure company policies, operational procedures and service standards are consistently followed.
  • Take ownership of opening and closing procedures, daily checks and operational readiness.
  • Maintain excellent communication between front of house, kitchen and the wider hotel.
  • Demonstrate a proactive approach to identifying and resolving operational issues.
  • Lead with integrity, professionalism and a genuine commitment to excellence.

This is more than an Assistant General Manager position. It is an opportunity to grow with one of Cornwall's most exciting hospitality developments.

With Tucker Rocks scheduled to open in Spring 2027, THE NICI Newquay will significantly expand its food and beverage offering.

This next phase creates an exciting opportunity for the successful candidate to become involved in the development and evolution of our wider restaurant operation.

Depending on performance, capability and business requirements, future opportunities may include:

  • Supporting the pre-opening planning and operational launch of Tucker Rocks.
  • Assisting with recruitment, training and development of new restaurant teams.
  • Helping establish service standards, operational procedures and the guest experience for the new venue.
  • Taking on increased leadership responsibilities across multiple food and beverage outlets.
  • Progressing towards Restaurant General Manager, Food & Beverage Manager or wider operational leadership positions.

We are particularly interested in candidates who see this position as a stepping stone towards a senior hospitality leadership career.

For the right individual, this is an opportunity to make a real impact today while helping shape the future of Food & Beverage at THE NICI Newquay.

  • Confidence in handling guest feedback and resolving service challenges.
  • Flexibility to work evenings, weekends and key trading periods.
  • A genuine passion for hospitality and creating memorable guest experiences.
