Overview

The Head Pastry Chef is responsible for leading the pastry section of the kitchen, overseeing the creation and execution of all baked goods, desserts, and specialty items. This role requires a high level of creativity, precision, and leadership, ensuring consistent quality and innovation in all pastry offerings. The Pastry Head Chef works closely with the Executive Chef to align with the overall culinary vision and standards of the establishment.


Key Responsibilities

  • Plan, prepare, and execute a wide range of pastries, desserts, breads, and baked goods.
  • Ensure consistency in taste, texture, and presentation across all pastry items.
  • Maintain high standards of cleanliness and food safety in the pastry kitchen.
  • Lead and manage the pastry team, including pastry sous chefs, bakers, and commis.
  • Provide training and mentorship to junior staff.
  • Schedule and delegate tasks to ensure efficient workflow.
  • Collaborate with the Executive Chef to design seasonal and event-specific pastry menus.
  • Develop new recipes and techniques to enhance the pastry offering.
  • Stay updated on global pastry trends and incorporate them into the menu.
  • Monitor stock levels and order ingredients in line with budget and forecast.
  • Control waste and manage portion sizes to maintain profitability.
  • Ensure accurate costing and documentation of all pastry recipes.
  • Coordinate with other kitchen sections to ensure smooth service.
  • Support in planning for banquets, catering, and special events.

Step in for the Executive Chef when required in pastry-related matters

Qualifications & Skills:

  • Proven experience as a Pastry Chef or Senior Pastry Sous Chef in a high-end kitchen.
  • Formal pastry or culinary training (diploma or equivalent).
  • Strong leadership and organizational skills.
  • Expertise in classic and modern pastry techniques.
  • Excellent attention to detail and creativity.
  • Knowledge of food safety and hygiene regulations.

Working Conditions:
