What You’ll Do
As a Saucier, you will be responsible for preparing and executing exceptional sauces, stocks, and reductions that elevate every dish. Your mission is to bring depth, balance, and bold flavors to our menu while maintaining precision, consistency, and high culinary standards.
Key Responsibilities
- Prepare, cook, and refine classic and modern sauces, reductions, and stocks to enhance the menu
- Maintain consistency by following precise recipes, portioning, and seasoning guidelines
- Monitor and control sauce textures, temperatures, and flavor profiles for optimal results
- Work closely with chefs and line cooks to ensure timely execution of all dishes
- Assist with butter-based, wine-based, and demi-glace sauce preparations
- Manage stock and broth production, ensuring deep, well-balanced flavors
- Keep mise en place organized, properly labeled, and stored at safe temperatures
- Ensure proper sauce plating and finishing touches for every dish
- Maintain cleanliness, organization, and sanitation standards at the sauce station
- Follow health department sanitation requirements and adhere to all safety guidelines
- Execute tasks assigned by Chefs and Kitchen Leadership with professionalism and enthusiasm
What We’re Looking For
- Previous experience as a Saucier, Sauce Cook, or similar role in a high-volume, fine dining kitchen
- Expertise in classic French and modern sauce techniques
- Ability to balance flavors, reduce sauces to the correct consistency, and season properly
- Strong understanding of emulsifications, roux-based sauces, and gas Trique
- Ability to multi-task and work efficiently under pressure
- Strong attention to detail and commitment to quality, consistency, and excellence
- Must be able to stand for extended periods and lift to 50 lbs.
- Availability to work nights, weekends, and holidays
