Job Purpose: Take charge of the kitchen and be responsible for preparation and service of food, ensuring that the highest quality, hygiene and service standards are met and maintained at all times in line with our guests’ expectations.

Reports to: F&B Manager
Department: Food & Beverage

Key Duties and Responsibilities:
 Take responsibility for the preparation and production of food within the designated section and check all dishes are presented to the standards set by the Company before they are sent to guests to ensure consistently high levels of food standards are met in line with our guests’ expectations
 Have full knowledge of all menu items i.e. commodities used, method, preparation and cooking and adhere to correct portion sizes, accompaniments and food presentation to ensure guests’ expectations are met every time
 Be aware of portion control and minimum wastage in order to assist in the maintenance and improvement of gross profit
 Ensure correct stock control procedures are adhered to, including the appropriate storage, rotation and retention of stock and that any irregularities are notified to the Head Chef
 Assist in identifying opportunities to improve the profitability of the kitchen
 Be responsible for the ordering of food items (completion of market lists) as required
 Maintain high level of communication with kitchen and food and beverage colleagues
 Ensure cleaning standards for all areas of food preparation and storage are met in line with food and hygiene regulations and company guidelines
 Ensure safe use of all equipment and machinery in the kitchen and report any defects in machinery and equipment immediately
 Ensure compliance, as appropriate to your role with relevant health & safety and equality of opportunity legislation as well as best practice as set out in the Company policies and procedures
 Any other duties as reasonably directed by your line manager or other member of the management team

Requirements for the Role:
 Up-to-date hygiene & food safety certificates
 Formal catering qualification/s (desirable)
 Proven experience of working in an effective and fast paced kitchen
 High standard of personal presentation
 Excellent communication, influencing and interpersonal skills.
 Courteous and pleasant attitude towards guests and colleagues
 Ability to work as part of a team
 Creative with a good eye for detail
 Ability to work under pressure and juggle competing priorities with minimum supervision
 Positive and flexible approach to work
