The Director of Food & Beverage is responsible for the overall management and profitability of all the food and beverage departments at Trump Turnberry which include 1906, Grand Tea Lounge, Duel in the Sun, King of Scots, In Room Dining, Banqueting, Kitchens and Stewarding. Responsible for leading the teams forward to achieve the highest levels of luxury customer service whilst identifying income streams, driving sales, and managing costs. Plan, direct, and monitor the Brand and service standards in all outlets and kitchens ensuring that managers take corrective actions as necessary in adherence to all policies and standards.
The diversity of the product offering encompasses a luxury hotel, spa, 3 golf courses, stables, self-catering apartments and group lodge accommodation across the grounds of the 800-acre resort.
The successful candidate will manage activities aligned with driving F&B profitability including controlling all budgeted margins on a daily, weekly and monthly basis, managing beverage costs and other P&L expenses. Effectively manage all F&B department’s rostering of associates in line with LMS standards to manage the monthly manpower costs as a percentage of revenue and in relation to covers/productivity.
Annually prepare the F&B budget and work with DOO and DORM on monthly forecasts for covers and expenses. Actively participate in all meetings as appropriate including daily operations briefing, weekly F&B Managers’ meeting, monthly Senior Team Meetings, monthly P&L meetings, weekly payroll meetings and any other meetings as requested or required. Also you will run weekly F&B managers meeting to review progress on recruitment, AOS action plans, guest satisfaction results, the Loyalty program, Empower.
Additionally, the successful candidate will review department Training Manuals and ensure F&B managers initiate and maintain a regular training plan for all associates in line with their roles and responsibilities.
