Position Overview:The Executive Chef is responsible for all aspects of back-of-house operations, from culinary excellence and kitchen leadership to cost management and team development. This individual will work closely with front-of-house and beverage leaders to uphold Wolfgang Puck’s high standards of service and hospitality, while ensuring full compliance with health, safety, and labor regulations.
Key Responsibilities:Lead and manage all kitchen operations, including prep and service, food quality, and sanitation standards.
Collaborate with FOH and beverage teams to ensure seamless service and guest satisfaction.
Control food and labor costs through effective scheduling, budgeting, inventory, and vendor management.
Develop and implement seasonal menus, production strategies, and plating standards in alignment with the Wolfgang Puck brand.
Oversee the training, coaching, scheduling, and performance management of kitchen staff; foster a culture of growth, accountability, and excellence.
Ensure compliance with all federal, state, and local health and safety laws; maintain staff certifications and sanitation protocols.
Provide hands-on support during service, assisting in food preparation, final plating, and guest interaction.
Monitor, maintain, and coordinate repairs for all kitchen equipment.
Uphold high standards of cleanliness, organization, and food safety throughout the kitchen and storage areas.
Frequently visit the dining room to engage with guests and support hospitality initiatives.
Ensure consistent application of HR policies and disciplinary procedures in collaboration with Human Resources.
Directly supervises all kitchen staff.
Responsibilities include hiring, training, assigning tasks, evaluating performance, and enforcing policies in compliance with company standards and legal regulations.
Minimum 3 years’ experience as an Executive Chef or Chef de Cuisine in a high-volume, upscale operation.
Culinary degree or formal culinary training preferred.
Proven success in leading BOH teams and managing kitchen financials.
Strong technical expertise in all culinary areas, including butchery, garde manger, and pastry.
Excellent knowledge of kitchen equipment, knife handling, and food safety procedures.
Strong interpersonal, leadership, and conflict resolution skills.
Effective communicator with excellent organizational, analytical, and problem-solving abilities.
Proficient with kitchen management software, inventory systems, and Microsoft Office Suite.
Must be able to stand and walk for extended periods (up to 8 hours), and lift/move up to 50 lbs.
Ability to work in fluctuating temperatures including hot kitchens and cold storage.
Must be able to bend, reach, crouch, and work near mechanical equipment.
Must be flexible to work nights, weekends, holidays, and long shifts as needed.
