As a Zuma Sushi Chef de Partie, you are responsible for for overseeing a designated section of the sushi kitchen, ensuring the precise preparation and execution of high-quality sushi dishes. You will work closely with the sushi team to maintain Zuma’s standards of excellence and deliver an outstanding dining experience to our guests.

Main Duties

Your key responsibilities will include:

  • Prepare and execute sushi dishes in accordance with Zuma’s recipes and quality standards, ensuring consistency and precision
  • Lead and supervise the team members in the sushi section, providing guidance, training, and support as needed
  • Ensure proper sushi preparation techniques, including fish cutting, rice preparation, and knife skills
  • Maintain exceptional plating and presentation standards, ensuring each dish reflects Zuma’s aesthetic and quality
  • Monitor and uphold food safety and sanitation protocols, including proper ingredient handling and storage
  • Maintain the cleanliness and organization of the kitchen, including workstations, equipment, and storage areas
  • Follow all food safety and sanitation protocols, including proper handling and storage of ingredients
  • Collaborate with other kitchen staff to ensure smooth and efficient operations during service

  • Extensive knowledge of sushi preparation techniques, including fish butchery, rice preparation, and knife handling
  • Ability to work flexible hours, including evenings, weekends, and holidays, as required
