We know that an excellent Sous Chef is one of the key ingredients to a successful kitchen, so this role will see you supporting your Head Chef, deputising in their absence and assisting with the development of the kitchen team to deliver efficient, high quality food service to our customers. Apprentices will have access to an online learning platform & portfolio system.
What will you do as an apprentice? Duties will be mainly based in the kitchens and will include: - Co lead the kitchen team with the Head Chef
- Deputize in their absence
- With the the senior management team to prepare and deliver large functions
- Food preparation - washing, cutting, portioning as instructed
- Cooking of food and presenting to specification
- Food rotation - being responsible for maintaining good food hygiene practices
- Equipment preparation and cleaning - ensuring that all equipment is to food hygiene and kitchen standards
- Kitchen cleaning - ensuring that the kitchen is maintained and cleaned as part of an ongoing standard

Apprentices spend time with industry experts, sharing ideas and boosting their understanding of key areas such as preparation and cooking, as well as flavour profiling, dish composition and seasonality. The workshops deliver content extracted from industry-recognised qualifications. Apprentices will have a coach assigned to them for 1-2-1 sessions at their place of work & for their progress reviews with their line manager.
What do we need from you? - The course Length is a minimum of 12 months, plus up to 3 months for End Point Assessment
- You will need at least 6 hours per week in paid hours to complete your off-the-job training (On & Off site)
- You will need to attend training at the Chef Academy roughly every four to six weeks
What are my next steps once I complete my apprenticeship? Once you have successfully completed this apprenticeship, you might be able to progress into a head chef role and continue your professional development with a higher level apprenticeship.
