Key Attributes
  • Previous experience as a Sommelier in fine dining restaurant.

  • Strong knowledge of international wine regions, grape varieties, vintages, and food pairing principles.
  • WSET Level 2, Court of Master Sommeliers certification, or equivalent qualification preferred.
  • Exceptional communication and guest service skills.
  • Ability to work efficiently under pressure in a fast-paced environment.
  • Excellent organisational skills and attention to detail.
  • Passion for continuous learning and staying informed about wine trends and producers.
  • Flexibility to work evenings, weekends, and holidays.
Role & Responsibilities:

  • Deliver outstanding wine and beverage service with professionalism and confidence in Àclèaf.

  • Recommend wine pairings that complement seasonal tasting menus and à la carte dishes.
  • Present, open, decant, and serve wines according to fine dining service standards.
  • Assist in developing and updating the wine list to reflect quality, diversity, and current trends.
  • Manage wine inventory, stock rotation and cellar organisation.
  • Monitor stock levels and take charge of with ordering, receiving, storage and stock take of wines and beverages.
  • Deliver a personalised guest experience by understanding preferences and exceeding expectations.
