What you'll do

As Sommelier, you'll love what you do and take pride in taking care of our guests:

  • You will be responsible for delivering knowledgeable, warm and attentive wine and sake service across the restaurant and PDR.
  • You will guide guests through our wine and sake selection, making recommendations that complement the cuisine and individual preferences.
  • You will maintain strong knowledge of Japanese sake, wine, service standards and beverage presentation.
  • You will work closely with the chefs and service team to ensure seamless pairing recommendations and an exceptional guest experience.
  • You will support the management of beverage stock, including receiving, storage, inventory control and maintaining the presentation of the cellar and service areas.
  • You will contribute to the development of our beverage offering and stay curious about new producers, regions and styles.
  • You will recognise regular guests and provide personalised service, reflecting our focus on Japanese hospitality and attention to detail.
  • You will show flexibility and creativity when dealing with special requests and challenges that may arise during service.

The items shared are the essence of a day in the life of our Sommelier, but we will make sure you are provided with specifics on how we care for our hotel.

The operational hours of work are shift-based and we would require flexibility. These shifts are currently set as:

  • Full-time opportunities available; shift patterns will be discussed at interview.

 

What you'll bring

  • Previous experience in a fine dining restaurant or luxury hospitality environment is preferred.
  • Strong knowledge of wine is essential; knowledge of Japanese sake is highly desirable.
  • You have excellent communication and guest service skills, with a genuine passion for hospitality.
  • You are confident, professional and comfortable working in a high-end, international environment.
  • English is the primary language used in our hotel. You can comfortably communicate in English.
  • A recognised wine or sake qualification is desirable but not essential.
