Main purpose of job:

To support the day-to-day management and operation of Hugo’s Restaurant, Atrium, and Poolside Drinks Service. The Assistant Spa Food Services Manager works under the guidance of the Spa Food Services Manager to ensure all service areas deliver an exceptional guest experience aligned with company standards. The role involves assisting with achieving revenue targets, upholding service and brand standards, supporting staff development, and contributing to the efficient, profitable operation of the assigned outlets.

Key Responsibilities:

Authority:

  • . Support the implementation of operational policies and service standards for Hugo’s, the Atrium, and Poolside Drinks Service in accordance with company directives.
  • Assist in managing assigned teams, including participation in hiring, training, and performance management, as directed by the Spa Food Services Manager.
  • Support staff discipline procedures in line with guidance from the Spa Food Services Manager, Head of F&B, and HR.
  • Organise daily team activities and service delivery to ensure smooth departmental operation.
  • Participate in staff recruitment and scheduling within the agreed complement and budget, in coordination with management.

Operation:

  • Assist in the daily planning and execution of food and beverage service across Hugo’s Restaurant, Atrium and Poolside areas.
  • Support the delivery of consistent, high-quality customer service by monitoring product quality, cleanliness, and ambiance.
  • Collaborate with kitchen and f&b teams to maintain menu alignment, service timing, and guest satisfaction.
  • Respond to guest feedback on the floor and escalate complex issues to management as necessary.
  • Contribute to the execution of new service initiatives, promotions, and events as guided by the Spa Food Services Manager and Head of F&B.

Finance

  • Assist in monitoring outlet budgets and contribute to efficient cost control across staffing, stock & consumables
  • Support the implementation of sales and profit strategies to meet financial objectives.
  • Ensure compliance with all financial policies, including purchasing procedures, stock control, and wastage reduction.
  • Accurately track and report on sales performance, staffing costs, and stock variances.

Staffing

  • Act as a role model, motivating and supporting restaurant and bar teams through effective communication and day-to-day leadership.
  • Assist with preparing staff rotas to ensure appropriate and cost-effective coverage of all shifts.
  • Participate in team briefings and performance check-ins to provide feedback and coaching.
  • Help coordinate recruitment, onboarding, and continuous training to support staff growth and service consistency.

Training and Development

  • Identify individual and team training needs and assist in the delivery of development plans under the guidance of the Spa Food Services Manager
  • Support the induction of new team members, ensuring they understand their roles and expectations.
  • Maintain accurate training records and compliance with statutory and company training requirements.

Health and Safety

  • Ensure high levels of personal presentation and uniform compliance for self and team.
  • Support adherence to hygiene, licensing, and safety regulations in accordance with food safety and general health and safety legislation.
  • Maintain awareness of and compliance with Fire, Health and Safety Regulations.
  • Assist in the completion of risk assessments, method statements, and COSHH documentation for relevant areas.
  • Promote and monitor compliance with all cleanliness, hygiene, health and safety, fire precautions, evacuation, and security policies.
  • Help ensure compliance with the Health and Safety at Work Act, Food Safety Act 1995, and all relevant codes of practice in designated food and beverage areas.
  • Foster a safe and supportive working environment by ensuring staff receive appropriate health and safety training and support.
