Tre Dita and Bar Tre Dita are a collaboration between award-winning Chef Evan Funke (Felix, Mother Wolf, Funke) and Lettuce Entertain You. Italian for "three fingers," Tre Dita is a nod to the precise thickness of a properly cut bistecca Fiorentina, which the “cucina Toscana” serves from its open-hearth, wood-fired grill, along with handmade pastas and more. Located on the second floor of The St. Regis Chicago, designed by award-winning architect Jeanne Gang, Tre Dita offers sweeping views of Lake Michigan and the Chicago River in Chicago’s Lakeshore East and is open for dinner service seven nights a week.

BANQUET CAPTAIN JOB DESCRIPTION

The Banquet Captain leads the banquet service team to provide efficient, friendly guest service at parties and special events.


Essential Functions

  • Lead a team during set up, break down and delegate responsibilities as necessary
  • Understand and follow specific banquet instructions and timeline including but not limited to menus, checklists, online banquet event order (BEO), contracts, room diagrams, and inventory sheets and respond quickly to changing priorities
  • Accurately record and account for orders, process payments, and balance sales/receipts
  • Effectively service head tables or VIP tables
  • Fulfill server shifts for events as needed
  • Expedite various styles of service including but not limited to buffet, seated dinner, etc.
  • Safely and effectively use and operate all necessary tools and equipment
  • Ability to effectively communicate in order to perform and follow job requirements in written and spoken direction
  • Available to work a variety of hours, days and shifts, including weekends
  • Multitask calmly and effectively under pressure
  • Work in a confined, crowded space of variable noise and temperature levels
  • Able to move and lift up to 10 pounds, frequently move and/or lift up to 25 pounds, and occasionally move and/or lift up to 50 pounds
  • Ability to stand and walk for an entire shift and move safely through all areas of the restaurant, which may include stairs, uneven or slick surfaces

Key Responsibilities and Duties

  • Ensure the overall guest experience exceeds expectations and anticipate guests’ needs
  • Greet guests with a warm, sincere smile
  • Use tact and good judgement when dealing with guest challenges and respond with patience and courtesy
  • Understand and respond knowledgeably to questions about the restaurant and menu
  • Use effective sales techniques when presenting promotions to guests
  • Follow all steps of service
  • Understand and follow the food allergy procedure and special orders/restrictions
  • Assist with in-house audio visual equipment as needed, including but not limited to music volume and playlists, microphone settings, and basic projector skills
  • Proficiency in the use and operation of all necessary tools and equipment, including the POS system and Frequent Diner, Gift Card and Credit Card terminals
  • Comply with all safety and sanitation guidelines and procedures
  • Successfully complete alcohol awareness training
  • Follow all rules, policies, procedures and conditions of employment, including those outlined in the Employee Handbook
  • Get along well with others and be a team player
  • Other duties will be assigned as needed
