The Oakville Grill & Cellar, which aims to bring the best of Napa Valley to Chicago’s Fulton Market neighborhood, will open this spring. This new concept is a collaboration between Chef Max Robbins (former Culinary Director and Managing Partner at Land and Sea Dept., and Executive Chef of Longman & Eagle) and Wine Director Richard Hanauer, Partner at RPM Restaurants. The menu will focus on simply prepared dishes made with expertly sourced, seasonal ingredients, with an emphasis on live-fire cooking. It will also boast one of the largest, exclusively California wine lists in Chicago and feature a first-of-its-kind tasting room that lets guests experience Napa Valley from Fulton Market.

The Restaurant Butcher / Prep Cook is responsible
for the preparation, production and presentation of all menu items with a focus
on fabricating meat,
poultry, seafood and shellfish.
Essential
Functions
- Prepare food items and
ingredients needed for menu items according to prescribed recipes and/or
special requests
- Fabricate whole fish (seafood
and shellfish) and poultry and sides of meat and also cut, trim and prepare
consumer-sized portions
- Ability to use knives proficiently
including mechanical slicers and other cutting devices
- Available
to work a variety of hours, days and shifts, including weekends
- Safely and effectively use and
operate all necessary tools and equipment, including knives
- Ability to effectively communicate
in order to perform and follow job requirements in written and spoken direction
- Ability to multi-task calmly
and effectively in a busy, stressful environment
- Work in a confined, crowded
space of variable noise and temperature levels
- Able to move and lift up to 10
pounds, frequently move and/or lift up to 40 pounds, and occasionally move
and/or lift up to 50 pounds
- Ability to stand and walk for
an entire shift and move safely through all areas of the restaurant, which may
include stairs, uneven or slick surfaces

issues to Coordinator
- Accurately account for all
items coming out of the kitchen

allergy procedure and special orders/restrictions
- Comply with all safety and
sanitation guidelines and procedures
- Follow all rules, policies,
procedures and conditions of employment, including those outlined in the
Employee Handbook
- Get along well with others and
be a team player
- Other duties will be assigned
