What does your role bring to the table?
The Risk and Licensing Manager is responsible for managing end-to-end workers’ compensation, guest injury, and liability claims, ensuring timely reporting, regulatory compliance, cost-effective outcomes, and a professional, people-centered approach. In addition, this role oversees key licensing and real estate–related activities, including FF&E purchasing, inventory management, liquor licensing, signage, and coordination with contractors and internal teams to support new and existing restaurant development. Additionally, this role reviews and manages contracts, identifying risks, ensuring alignment with company policies, maintaining contract records, and monitoring key obligations and renewal timelines.

Taking on the role of Risk and Licensing Manager isn’t just about bacon and pancakes. The responsibilities of this position include:
Workers’ Compensation Claims Management
· Manage all aspects of workers’ compensation claims from initial report through resolution.
· Ensure timely and accurate reporting of injuries in compliance with state and federal regulations.
· Serve as the primary liaison with insurance carriers, TPAs, medical providers, and legal counsel.
· Monitor claim progress, reserves, and settlements to ensure cost-effective outcomes.
· Partner with HR, Safety, and Operations to support return-to-work and accommodation programs.
· Identify claim trends and recommend strategies to reduce injuries and claim frequency.
Guest Injury and Liability Claims Management
· Oversee intake, investigation, and resolution of guest injury and liability claims.
· Coordinate fact-finding, documentation, and evidence collection related to incidents.
· Work with risk management, legal counsel, and insurance partners to evaluate exposure and determine next steps.
· Ensure claims are handled promptly, professionally, and with a strong focus on guest experience and brand protection.
Risk and Compliance Support
· Maintain compliance with all applicable laws, regulations, and internal policies.
· Support audits, litigation, and regulatory inquiries as needed.
· Maintain accurate claim files, reports, and documentation.
Licensing and Real Estate
· Purchase FF&E for new and existing restaurants including chairs, lighting, patio furniture, umbrellas, etc.
· Work closely with each general contractor to ensure timely delivery of FF&E purchases
· Review and process purchase orders and invoices, ensuring accurate cost coding
· Manage inventory of specific FF&E that are purchased in bulk and/or have long ordering lead times
· Supervise liquor license consultant to ensure liquor licenses for all new restaurants and legal compliance and education is in place for all new markets
· Facilitate renewals of existing Snooze licenses
· Oversee the sourcing and installation of Snooze signage and graphics for each new location
· Maintain a detailed understanding of the entire development schedule and process
· Keep all vendors and internal teams informed of changes in projected open dates
· Obtain lease abstracts and distribute to key players
· Create restaurant floor maps for operations
· Review restaurant layouts and floor plans and provide feedback to Restaurant Designer
· Assist with the development, maintenance, and forecasting of expense and capital budgets in area of responsibility
· Ensure that projects meet all legal, compliance, internal controls, and restaurant operating standards
· Remain current on industry best practices and trends, recommending improvements and upgrades accordingly
Contract Review
· Review, summarize, and flag key commercial, legal, and risk terms in customer, vendor, partner, and confidentiality agreements
· Identify non-standard provisions, deviations from approved templates, and potential business or legal risks for escalation
· Ensure contracts align with company policies, playbooks, and established risk thresholds
· Maintain contract documentation, version control, and organized records within contract management systems
· Assist in developing and refining contract templates, checklists, and review guidelines
· Monitor key contract obligations, renewal terms, and notice periods

Denver area base salary range:
$80,000 to $100,000 annually
The base salary range represents the low and high ends of the Snooze salary
range for this position. Actual salaries will vary and may be above or below
the range based on various factors, including but not limited to experience,
education, training, location, merit system, quantity or quality of production,
responsibilities, and regular and/or necessary travel. The range listed is just
one component of Snooze’s total compensation package for employees.
